Why brake work on luxury cars needs a specialist

Because the systems are genuinely different. Many Porsches and supercars run carbon-ceramic brakes (PCCB/CCB) that must be handled with specific procedures; caliper and disc choices have to clear specific wheel designs; and bleeding, fluid selection and electronic integration must be right for a car that will actually be used at speed.
